Hello there!
The first part of your question relates to local policies which are dictated by local people's views on what is important to them as well as what the professionals think is important - local and organisational policies have to consider local need and available local facilities. For example, our local hospital mortuary does not have the facilities to deal with certain infections so individuals who die with certain diseases have to be sent to an out of county hospital and their policies and procedures detail when and under what circumstances this should be done. If you google your own local hospital and 'infection control policy' you should get a document outlining their infection control procedure - this may be wrapped up in a 'how we manage bird flu' policy so you may well have to dig a little to find it. Going to the hospital homepage may also have a link to their local infectious diseases policy.
Procedures and systems could relate to the order and method in which you cleanse your hands or put on/take off your personal protective equipment. Other systems might be the colours of bags you use to dispose of different kinds of waste or how you are expected to dispose of sharps.
Potential risks of infection - becoming ill from infectious illnesses through inhaling droplets (if the patient/client has flu); ingesting faecal material through not washing hands thoroughly after cleaning an incontinent patient; food poisoning from poorly stored or prepared food; needlestick injuries and eye splashes of infected material.
